Rabbit in the Mountain

  • 01 rabbit
  • 03 medium onion
  • 01 branch great salsa
  • 150 ml olive oil
  • 01 tablespoon of lard
  • 300 ml of white wine (approximately)
  • salt
  • pepper.


After it is prepared, cut the rabbit in bits. Sting-if finely onions and parsley. In a pan put in alternating layers of the pieces of rabbit, onion and parsley. After the expiry of these elements, season them with salt and pepper and pour the olive oil.

Add the lard and cover with the white wine. Cover the pan tightly and it takes to cook on a low heat, shaking the pan occasionally to prevent sticking.

Rectifies the taste and serve with boiled potatoes.
